Homemade gnocchi is a perfect special occasion recipe. Save this for your next date night, girls night, or to treat yourself! Serves 2 as a main dish with leftovers, serves 4 as a side dish.
Gnocchi:
- 1 1/2 lbs russet potatoes (about two medium-sized russet potatoes)
- 1 cup all purpose flour plus more as needed
- 1 egg lightly beaten
- 3/4 teaspoons Kosher salt
Herby Brown Butter Sauce:
- 1/2 cup unsalted butter (aka: 8 tablespoons or 1 standard stick butter) cut into about 8 small pieces
- 1 tablespoon fresh sage or thyme leaves roughly chopped
- 1/3 cup freshly grated Parmigiano-Reggiano plus more for serving
- freshly cracked black pepper to taste
