This Summer Watermelon Salad with Feta, Lime, and Mint is the easy and refreshing dish you'll lean on all season long. The addition of feta, lime, and mint is classic, and I'm sharing other suggested swaps underneath the recipe to riff and make it your own.

Ingredients
  • One medium sized watermelon, about 7 lbs
  • Zest and juice of 1 lime
  • 1/4 cup fresh mint, chiffonaded (sliced into thin ribbons)
  • 1/3 cup crumbled feta

Instructions
  1. Cut watermelon into cubes, and toss with the zest and juice of one lime, chopped mint, and crumbled feta, and serve.
Let's riff
  • The Lime: Sub in lemon zest and juice, or a splash of champagne vinegar.
  • The Mint: Any soft, tender herb is a great swap. I love basil, and though not an herb, fresh, peppery arugula is a delicious addition.
  • The Feta: Crumbled goat cheese is a classic sub. Omit the cheese entirely to keep it dairy-free and vegan.
  • The Aromatic + Spicy Additions: Thinly sliced red onion or shallot adds a punchy bite. Chili powder adds subtle heat.

I made this same amazing salad with the following additions: I used a bed of chopped romaine hearts, and squeezed the juice of all the trimmed cara cara oranges, plus 1/2 lemon, added a drizzled of Tupelo honey on top. The herbs: chopped fennel fronds and mint. Everyone went crazy for it!
